Vintage: 2012

Region: Chablis

Country: France

100% Chardonnay

Excellent old vine Chablis from one of the oldest and best producers of the region.

Fermented with all natural yeasts for 3 weeks, followed by malolactic fermentation & 12 months of aging on lees with monthly batonnage followed by 4 years bottle age before release.

Not lean and steely like many Chablis, aromas of lemon curd, almond paste, dandelions and burnt butter. Ample palate weight and grows in the mouth, savoury stone fruits and a moreish mineral finish.

Daniel Defaix is a traditional-style producer, with 25 hectares of the best vineyards in Chablis. Based in the tiny hamlet of Milly just outside the village of Chablis, the family has been tending vineyards for over 250 years. This Vieilles Vignes is long, intense & complex and has a marvellous purity of fruit that is the very essence of first-class Chablis.
