Bright straw in colour, this lightly oaked Chardonnay is Chablis in style. White peach, minerals and a hint of tangerine lead to a sustained finish with some reductive detail from the fortnightly barrel stirring. The mouthfeel features soft, fine textures and fresh acidity giving structure and energy.
Dry farming since planting day has forced the vine roots to grow deep into the sandy soil in search of water and nutrients, maximising exposure to the native terroir and resulting in more intensely flavoured grapes. 100% Chardonnay with a 50/50 mix of 2 clones, 95 and 548, we have a very tight well-defined Chardonnay that will reveal more of itself with careful cellaring.
Handpicked and whole bunch pressed fruit was settled over night then transferred into 20% new French barriques and hogshead barrels. Post fermentation the barrels were topped with fortnightly barrel stirring to increase complexity and impart some yeasty goodness. Aged on lees for 10 months to mature and evolve before bottling.
